Ingredients
  1. 3 eggs
  2. 1 c. canola oil
  3. 2 c. zucchini, chopped
  4. 1 T. vanilla
  5. 2 c. sugar
  6. 3 c. flour
  7. 1 t. salt
  8. 1 t. baking soda
  9. ¼ t. baking powder
  10. 3 T. cinnamon
Instructions
  1. Preheat oven to 350° and grease and flour (or spray) loaf pan.
  2. Mix together the first four ingredients in blender or food processor and set aside.
  3. Combine the remaining ingredients and add to zucchini mixture.
  4. Add your choice of raisins, chopped nuts or chocolate chips (12 oz.).
  5. Bake at 350° for one hour in a conventional oven or at 325° for 40 minutes in a convection oven.
Notes
  1. This bread is moist & delicious and freezes well. Enjoy!
